This somewhat nostalgic and stable “suribachi(mortar for grinding)”, which looks like something you might find in your parents' kitchen, is from Iga ware, which is famous for its earthenware pots.
Using the robust Iga clay and black candy glaze, it is the result of a collaboration between Koubo-gama, an Iga-yaki pottery studio, and Azumaya.
The dish is used not only for standard dishes such as sesame paste and grated yam soup, but also for mashed potatoes, cucumbers, and carrots,
Potato salad by mashing potatoes and mixing with cucumbers and carrots. It is also very useful for making sweets by grinding nuts and sesame seeds and mixing them in.
Sometimes, it is even nice to use it as a serving bowl at the table. The shape of the bowl looks simple and rustic, but in fact, it has been carefully designed down to the smallest detail.
The groove just below the inner rim is not just a design feature.
The groove is designed to catch and collect the foodstuffs in one mouth so that they do not flow out of the other mouths when the foodstuffs are grinded in the mortar and pestle and poured into other vessels with great force. The 8” size can be used as a bowl or a serving bowl.
It is also useful for making chilled soup, grated yam, potato salad, etc.
